Selecting an heirloom variety of organically-grown cacao is only the beginning. We went one step beyond the extraordinary to offer raw cacao beans shaped by two different levels of fermentation. First, we selected raw cacao beans that had been maintained within the realm of ultra-low fermentation, below 10% throughout the entire batch.
